Can you make quiche using pizza/any kind of regular dough?



I'm watching Gordon Ramsay's video and he makes a "short crust pastry" for the quiche.

I'm new to cooking and I tend to fail every time I attempt to make my own dough so I usually opt for getting fresh dough from the local bakery since it comes out the same price wise and it's as you can imagine way easier. But I've only used it for pizza and bread so far, never for quiche, in fact I've never even made quiche, and I'm just wondering how important is it that it is "short crust pastry" instead of plain dough. Is it a matter of just "this is how the original recipe goes so it must be it" or will it be completely ruined if I use regular dough?
